At Marchaland Farms we sell our beef by halves and wholes and pricing is determined based on the hanging weight of the animal. Hanging weight is the amount of the beef after slaughter that is in the processor’s cooler prior to processing. All the processors that we work with will age your beef to perfection using a proven technique called dry aging. To dry age your beef the processors hang your beef in a cooler for around two weeks to allow natural enzymes to tenderize your beef and provide it with optimal flavoring. Dependent on how you have your beef processed you can receive a variety of cuts. Listed below are some of the common cuts that you can receive: (please keep in mind you may not be able to receive all of these cuts depending on how you have your beef processed.) Also, note that the organ cuts (heart, liver, and tongue) or any Marchaland Farms cut for that matter could create a healthy and safe source of pet food.

You may simply select this cut sheet and be done, or if you would like you can customize the way you would like to have your beef cut.
